I try to blog mostly about food that pertains to the plants I sell but in this case, ya'll are getting a freebie out of me! I just want to share this amazing recipe with you from this Thanksgiving! Maybe you can make it for you and yours for Christmas!
As stated in some of the other recipes, I am not real good at measuring and tend to "eye ball" alot of recipes. In this case, I do know I started with one very large fresh yam as no one else really wanted yams. I sliced it mandelin style wishing I had an actual mandeline slicer. Then, I placed it in a small glass casserole dish adding a swirl of molasses, another swirl of honey and topped those with a splash of Sugar in the Raw and another splash of brown sugar. I sprinkled a couple of teaspoons of flour for thickening and topped that with a big scoop of butter. You can't forget to add a trickle of vanilla (real is best but with the economy, imitation works too.) Then add pecan pieces and here is the twist: add a generous swirl of Pecan Praline Whiskey and another swirl of Rumchata. Oh, and sprinkle with a bit of cinnamon and nutmeg or allspice!
You are going to cover these with foil after adding marshmallows to the top. The alcohol is going to force those marshmallows to trickle down into this mouthwatering dish. Bake for 30 minutes on 325-350 and then, remove the foil and add more marshmallows to cover. Watch closely as you just want those marshmallows to brown and melt. Now, let cool. Taste and thank me!
